Prions
are infectious agents that cause disease when their misfolded proteins
cause structural abnormalities in the brain and neural tissue. Well
known examples of human disease include
Creutzfeldt-Jakob disease (CJD) and kuru, and in animals, mad cow
disease (Bovine Spongiform Encephalopathy, i.e., BSE). This article
highlights the potential risk of eating venison from animals that are at
risk of contracting chronic wasting disease (CWD). "For now, some
experts recommend that hunters who harvest deer and elk in affected
areas get a sample of their kill tested before grilling up any venison
steaks. If the test comes back positive, they recommend discarding the
meat".
